Why grease clogs drains

Warm grease from dishes cools and solidifies in the pipe. It binds food residues and forms layers that turn rancid and smell. In a grease trap it builds up on the surface and shortens the emptying interval.

Biological maintenance

Selected bacteria produce enzymes that break down fats, starches and proteins, and biosurfactants that emulsify fats. Broken-down grease does not re-solidify further along the sewer.

How to dose in a commercial kitchen

Ideally daily after the kitchen closes, when no hot water with detergents is running through the pipes. Choose a dosing point as close to the grease trap as possible. Add the powder form for large grease traps and pumping sumps.

What to watch out for

Clear a clogged drain first. Do not dose the deposit-loosening cleaner directly into the grease trap, as the loosened grease would settle in the sewer further down. The grease trap still has to be emptied according to the operating rules and local sewer regulations.
